Ingredients

  • 3 lbs beef chuck, cubed

  • 1 large onion, diced

  • 3 carrots, chunked

  • 2 sweet potatoes, cubed

  • 1 cup dried apricots

  • 3 cups beef broth

  • 2 tbsp tomato paste

  • Spice mix:
    2 tsp cumin
    2 tsp coriander
    1 tsp cinnamon
